Pier 23

Last night, after arriving in San Francisco, my family decided to try a restaurant featured on the Food Network show, Diners, Drive-in’s and Dives. Guy Fieri would be so proud! Anyway, this place was situated right on San Francisco Bay. We watched the sun set, while sipping wine from juice glasses and keeping warm by the outdoor heaters. I loved the feel of Pier 23. It was simplistic, romantic and… DELICIOUS. I ordered the Thai Prawn with Rice Noodles. What the heck is a prawn, you may ask?! You read my mind…. Apparently its another name for a gigantic shrimp. {I guess that makes the name of the meal read a little more smoothly. }It was prepared in a coconut and curry sauce and garnished with peanuts and cilantro. Because of the rice noodles, the fish was gluten free, and due to the coconut milk, it was low in sugar. If you’re headed to San Fran anytime soon, head to Pier 23. You won’t be disappointed.

Picture Perfect Pancakes

I’ve only tried a few gluten free pancakes so far, and the ones I have tried, well, I could live without. This morning I woke up feeling the urge to use the gluten free flour I was given by the family I babysit for. I got on Pinterest {the best search engine ever} and searched for recipes that use gluten free flour. Come to find out, there are SO MANY different kinds of gluten free flours: coconut, almond, tapioca, brown rice.. etc. This list goes on and on. Maybe one of these days I’ll dive in and find out what exactly sets them all apart! Today, I used a recipe that had a pumpkin and cinnamon twist! Mmmm, these would be perfect for the Fall.

I made a couple of changes:

Brown Rice Flour for Coconut Flour

3 packets of Stevia for 1/4 c Swerve Sweetener

I completely left out the ginger and cloves… simply because I didn’t have them on hand! I would recommend trying them!

I even topped them with some sugar free syrup.

Fat Tuesday

I know it’s Wednesday, but I wanted to take a second to spotlight my dinner last night. I had one of the best American splurge meals of all time. Pizza. GLUTEN FREE PIZZA! {crowd cheering}

I’ve tasted several gluten free pizzas in my day, but boy is this one spot-on! The crust is thin, due to the Tapioca Flour that is used in place of the Wheat Flour, but the perfect texture. It’s seasoned with Olive Oil and topped with Tomato sauce, mozzarella cheese and, in this case, pepperoni!

Lean Green Machine

Incorporating vegetables into my daily diet is harder than it should be. I mean, do you know anyone that rolls out of bed saying, “Mmm broccoli for breakfast”? I don’t. Honestly, I’ve always just assumed vegetables were meant for dinner. Newsflash Shelby: THEY’RE NOT.

I’ve found a snack. A green snack. And no I’m not referring to all the green M&M’s from the trail mix bag.

Drumroll please…. 


These babies are rockin’. They were $5.99 from Trader Joe’s, meaning if we had a spectrum of necessary expenses, these would be in the yellow range (green being ‘Duh, get them’, red being ‘Heck no, I’m a college student’). Yellow can be our ‘I probably shouldn’t but I am anyway because I’m obsessed with food’. I tend to fall in this category far to often…  

Sorry, money tangent… buy these. They’re worth it. 1 cup is only 130 calories and 3 grams of fat! There’s even 2 grams of protein! What a nice surprise.They make an excellent salty and crunchy snack! 

Picture Or It Didn’t Happen

I don’t cook often, like really I don’t cook much at all. But I promise you, I am trying to change that! It’s so much easier to monitor what is going in your body when you’re in charge of, well, what goes in your body…. Tonight, I made Cajun Chicken Pasta with Gluten free noodles. It was SPICY but enjoyable. Next time, I’ll probably go easier on the cajun seasoning.



Green Tea & The Workplace

Aside from a little afternoon energy boost from the caffeine, Green tea has several benefits that are absolutely worth knowing! Here are some fun facts to keep in mind before that 3 o’clock sweet-tooth catches you off guard:

…LOADED with antioxidants that fight oxidative damage within our cells, decreasing chances of cancer. BAM! That should be reason enough to drink a cup of afternoon tea {said in my oh so authentic British accent}.

… a protectant against dental decay and unhealthy imbalances of bacteria throughout the body.

… an aid in weightloss and healthy digestion.

…DELICIOUS! Today I had Bigelow Green Tea with Lemon.


Staying Simple

Good Monday Morning! Today, I am keeping things simple, to make up for some not so great food choices made over the weekend. Whoops… what can I say?? I went to a wedding! Mmmm. 

One can never underestimate the power of a simple egg breakfast. I scrambled one egg with a splash of almond milk and a pinch of both salt and pepper. Then, popped two turkey sausage patties in the microwave (not exactly fresh off the turkey farm, but it is quick and easy before work or class). Finally, I washed some fresh blueberries and poured a cup of hot coffee! 



High in protein and antioxidants, this day-starter is exactly what I needed on this Monday morning. 

Sunday Brunch

After an awesome church service, my boyfriend and I decided to branch out from our ‘usual breakfast joints’ and try something new. We decided on Egg Harbor Cafe. It was delicious and had such a fun atmosphere! I decided on the Quinoa Breakfast Bowl, located on their gluten-free menu. It had red and white quinoa with several different types of seeds and nuts {sunflower, pistachio, flax etc}, almond milk, berries and honey to sweeten. This dish is high in protein from the Quinoa and Almond Milk, but also high in antioxidants from the berries! Instead of using the Honey, I sweetened mine with Stevia. It definitely did the trick!

Summer Salad

If you’re anything like me, salads aren’t your favorite. It’s just something about the cold wilted leaves that doesn’t sit well with me… I must’ve had a traumatizing experience as a child.

This is my rendition of a summer salad… green, protein packed, crunchy & NO LEAVES!


I stopped on my way home from the pool at Chickfila and bought a medium cup of chicken salad for almost $2. (Not bad!) Then, I grabbed a couple gluten-free crackers (I prefer Mary’s Black Pepper crackers) and cut up half of a green pepper. Yum. Light, summery and nutritious!

Berry Yogurt

This morning was a yogurt and coffee kind of morning. I woke up hungry, but not THAT hungry. You know, like the ‘I would eat a tall stack of pancakes with a side of waffles right now if I could’. So I decided on yogurt. 


Plain Fage Yogurt

1 packet of Stevia

1 tsp Cinnamon 

Freshly washed organic blueberries

A sprinkle of Oli+Ve Vermont Maple Vinegar 


This breakfast is light and simple, while still being loaded with nutrients and antioxidants.
